Ham Hocks been so expensive I won't buy. Love using them in beans. Found these today. Going to cure and smoke then freeze.

Also found these great looking Ribeye's on sale. On top of good price I had a 20% of grocery's coupon! Just in time as i running short on these. This the first money I spent on meat in a while. Even the 50% off stuff been to high. Hording meat sales and filling freezers before Covid turned out to be a good thing!

How do you do yours? I was thinking of using Pop's brine then smoking to 145. Wonder if I should use pickling spices or anything in the brine?

As Sir Chop has said, Tender Quick and brown sugar. I don't know if the liquid smoke
is needed since he going to smoke them.
Wet cures are fine too if you have the fridge space.
Did I say those hocks are big and beautiful! and that price is just incredible.
SCORE!

Great score Brian. Glad you able to find what you were looking for at a price you were willing to pay. Now get to work cooking and show us what we really want to know :emoji_laughing:
