Hey all need some advice. Threw on a brisket last night and went to bed. An hour after I threw it on my stupid pit boss shut down. Either my thermoworks smoke didn’t go off or I didn’t wake to the alarm. If I start it again tonight is it going to be ok? Or will sitting in the seasoning that long make it too salty? It made it to 88 internal is all

Also is it possible to smoke it in 12 hours?
 
If it shut off last night why try the same thing again? Did the brisket set in the smoker all night, what was the outside temp? You can cook a brisket in 12 hrs...not sure you should cook the brisket you have in 12 hrs.

I could monitor it today, my pb has hit or miss issues. Temp was prob around low 40s. Turns out mover didn’t turn off, it just pumped pellets all night with no fire. Have to work tomorrow so it would be nice to get it done by bedtime
