Here in Texas these BBQ places make these huge battered deep fried sausage peppers. I have tried to make couple times and they just blew up on me. Can't really find a recipe online. I think they all keep their recipes secret. I did find out need to freeze them before battering. Going to give another try tomorrow. Going to use a beer batter. Will take any hints.
