Made another batch of Italian w/jalapeno and cheese. The Wife is really getting in to it. When we got this batch into the casings, we rolled them on a plate and put them in the frig to dry a little before we tied them off. Something came up with the kids and we could not get to them that night. So the next day we pulled them out to tie off. Well they melded and formed. When we tried to tie them they just busted. So I decided to smoke  them whole. They turned out great, good flavor and a good snap. As you can see in the pictures they looked good, and we learned do not let anything come between you and your sausage.
