Ive had some misses when Im smoking ground pork. I keep over cooking it. Im going to smoke some sausages from costco's, What IT should I shoot for? or any other hints?
 
Are you smoking fresh ground sausage or a pre-cooked sausage like their kielbasa?  If it's a kielbasa or similar product, it may have already been smoked (likely was) so be careful not to over smoke it (or just cook on a grill like Cranky Buzzard said).  If it's a fresh, totally uncooked sausage then you can smoke it, but you cannot go for hours as it does not have cure in it. The lack of cure is why it would be best to hot smoke it.
