So with being from pa dutch country and getting into smoking i wanted to combine two of my favorite foods,(pork and sauerkraut), i made an injection of equal parts sauerkraut juice and apple juice and mixed in a little of the rub i used for the pork as well. Smoked it around 235 and took it to in internal temp of 147. Turned out well with a hint of sauerkraut in the pork. Also made twice baked potatoes to go with it(in the oven though).
This maybe how i make the pork for new years day this year.
