I started grilling on a gas grill using wood chips and since then I have found I really enjoy smoking meat. I have moved from a gas grill to a combine gas grill and charcoal grill. I have a standing gas smoker which I found being new to smoking helps to maintain a good temp for long smoking times (which helps me understand more about heat and smoking). I am making a wish list of my next equipment to replace my current grills when they good bad. I do cook on the grill all year long and really enjoy the hobby. My family and my Air Force Reserve unit love my chicken ( and usually won't let anyone else cook for them when it comes to chicken), but I feel I could be a lot better and looking forward to the next level. I do not want to be in competition smoking, but would love to be better than the average backyard grill-er. ( have smoked chicken, ribs, pork shoulder and brisket) My current equipment is a masterbuilt smoker(gas), and a char-broil gas and charcoal grill. ( I added a SFB to the charcoal grill side)

 Just right size for my parties(I've cooked for 300 several times)...

 I baffled and plated her and can control across the Horiz. or push it all to the Vert. and hold /smoke anything I want.
