What to do with all that leftover turkey? Make a leftover meal that tastes fantastic and doesn't taste like yesterday's main course. Here is the recipe:

Ingredients:
  • 16 oz turkey or chicken breast
  • 14.4 oz can diced tomatoes with mild green chilies
  • 15 oz can black beans – drained
  • 8 oz frozen corn – or – 1 15 oz. canned corn – drained
  • 1/4 cup chopped fresh cilantro
  • 16 oz (or so) chicken broth
  • 3 scallions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • salt to taste
Directions:
  • Combine all.
  • Bring to simmer in a pot or slow cook in a crock-pot.

Sounds good. We are making turkey enchiladas tonight. Many good uses for leftover bird.
