- 16 oz turkey or chicken breast
- 14.4 oz can diced tomatoes with mild green chilies
- 15 oz can black beans – drained
- 8 oz frozen corn – or – 1 15 oz. canned corn – drained
- 1/4 cup chopped fresh cilantro
- 16 oz (or so) chicken broth
- 3 scallions, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- salt to taste
- Combine all.
- Bring to simmer in a pot or slow cook in a crock-pot.
