Got a new MES40 today, and am seasoning it as I speak! It has about 40 minutes before chip time but it still smells chemical or oily. Heated it up to max per instructions. I was thinking of adding more time before wood chips, couldn't hurt. What do you all think?
 
Congrats on the new MES it won't hurt to wait a little longer on the chips but not sure you'll gain anything by waiting either
 
I didn't wait too much longer. Put in the chips and it put out some nice smoke. I thought about bringing it inside cause it smelled so good. The inside has such a nice copper gold color. Can't decide what to try first. I am still planning on a larger wood smoker on our property with a dug out wood pit. Have to research that first. Someone I knew did the natural smoker and cooked some Gulf mullet. They were so good. Thanks for the reply, and Merry CHRISTmas to you and yours.
