Hi fellas. I already posted this in an old thread, but I was advised to start a new thread and post it in this sub-forum. So, here goes.
I picked up an old 60s/70s Outers Hickory smoker. Similar to the Little Chief. Anyway, I plan to do some salmon on it. When I got it home, I plugged it in and put some cherry wood chips in the wood pan. I came back less than ten minutes later and it was already throwing out smoke. I let it go a while and the temp settled in at 148F which I checked with an instant read thermometer through the top vent. It was about 65F outside with good wind so I think if I left it in the garage, I could get it up higher, probably 160. Is that going to be good enough to do the job on salmon?
I need recommendations and advice on prepping the salmon and actually smoking it. Any help would be great. I like simple and I guess I would prefer a lower sugar brine if possible. I have smoked ribs and brisket on my Weber gas grill, but I couldn't ever get it low enough to do fish.
Here are some photos of the smoker. It is a couple feet tall and in the inside is 10.5" wide by 10.5" deep. Is apple or cherry a good wood for smoking salmon? I plan on Beef Jerky eventually too.
Let me know how to get this done.
thanks, Bruce
