At what point/temp do you think I should wrap it up in towels and throw in the cooler?  Sorry to pester y'all with question after question, just wanting to get this thing right the first time.

I usually cook mine until it hits 200 then pull it and wrap it up and hold in the cooler, but some guys wrap it up around 170 and then take it off at 200 and put it in the cooler
 
Either way works...Let it ride to 200* then foil or foil now and put it back in to go to 200*...JJ
