I set a 6.5# butt into my 38° fridge to thaw last night (Saturday) for a smoke on Tuesday. No concerns about it being thawed by the time it hits the smoker circa 6 am Tuesday, but this was in a deep freezer and I think it might still be a bit frosty Monday night when it's time to apply the rub. (I always rub 12 hours pre-smoke, I know not everyone does.)

Any issues with going ahead and rubbing the mostly thawed shoulder and just letting it finish thawing with the rub already applied overnight?

I figure I might just need to give it a fresh sprinkle in the morning to replace any rub that might have "bled" off with the final 12 hours of thaw.

No issues!  That's exactly the way I did my last butt...matter of fact, I believe it was still a little icy in the middle when it went in the smoker and took a few hours longer than I expected it to!  LOL

Came out perfect as usual though!
