Is it ok to put rub on and out in fridge overnight before cooking? That way can save time and not get up as early.
Same here. I always rub the night before and add more before it heads to the smoker. I do it with ribs and brisket too.I prefer to rub the night before if possible.
Let's the salt in the rub brine into the meat.
With Butts I unwrap in the morning and add another coating of rub, makes an incredible bark.
