Rolled Turkey

Well my wife decided to volunteer me to bring a rolled smoked turkey to church next week. So I spent some time deboning a whole turkey. I seasoned it with salt, pepper, garlic, onion, lawrys, Italian seasoning on the inside. I rolled it up and used butchers twine to fasten it. I then vaccum sealed it and put it in the freezer. I'll pull it out on Thursday and smoke it on Friday evening. I'll reheat it at church. Here is some pics of it all rolled up and deboned. I'll add more when I do the cook.

I'm thinking of doing this again but next time adding cream cheese and spinach kind of like a pinwheel.

Never saw or heard of this before! I’m in for the ride!

It's not to hard but it is time consuming. I start on the back and then go slow using the knife to cut and scrape the meat. I do cut the wing flats off though to make it easier. Next one I do for Thanksgiving I'll try and get some footage of the process.
 
I did this for the first time a few years ago and ever since then it is the only way my wife wants turkey.

I started doing it for sliced deli turkey , following a Len Poli method .

I do remember seeing posts about you doing deboned turkey beasts that you roll. I honestly don't remember what made me decide to debone an entire turkey the first time I did it but we sure do love them that way.

It just makes sense really , and you get more bang for your buck . The breast alone are pretty simple . I just did 2 whole turkeys and ground it all .
Don't think I'll be doing that again . Lol .
Next one you do , try curing the thighs .

I would never cook a whole turkey as it's just me and a hound, but I'm interested to see how you did that. Maybe I'd try.. who knows?
 
I've deboned a few chickens to make a Galantine, but never thought about trying it with a turkey. I'm guessing that really ups the difficulty level, especially with all the hard tendons in the drumsticks.

The tendons do suck but I use a paper towel for gripping them and a fork to pull them through. I save everything for turkey stock though. Otherwise it is the same just a little larger 😀

Well you could roll it up whole then smoke and slice into single serve pieces and put them in the freezer. Or invite a bunch of us over to eat it for you 😁
 
Alright today is the day. The turkey roll is on the pellet pooper rolling at 325. I also cut up some red onion, zucchini, and yellow squash to go on the grill as well. I got the outside of turkey with lawrys and cracked pepper, I seasoned the veg with SPGO and Italian seasoning oh and a couple dobs of smoked Tallow.

Perfect starting temp for that .
I found a whole bird in the bottom of my chest freezer yesterday . It will be broke down next week .
Very nice. I have 2 more in my freezer. I wait until after the holidays and pick a bunch up for cheap.
Oh and here is what it looks like so far.

Try curing the legs and thighs on one . The thighs are crazy good cured and smoked .

They work great for veg .

Getting some great color on it. Turned temp to 300 and melted a 50/50 butter and smoked Tallow added garlic, onion, and Italian seasoning to it. Over next hour I will hit it with the butter mix.

You got the temps going that I like on poultry . I usually finish around 325 / 350 .

have not seen those trays. Now I'm going to have to look into something new my wife will appreciate that I'm sure
If she likes the grilled vegetables she just might buy one for you . They have different sizes and styles .

Don't know the exact size , but this is on a Genesis 310 .
So it's about the size of a sheet tray .

Well here is the finished product it rested 3 hours before being sliced for the potluck. Grabbed a picture while there was still some in the pan.
