Roast Beef and Jerky with VIDEO-Q

Did 2 eye of rounds for sliced roast beef and another for jerky.

Marinaded the roasts for 24 hours with Worchestshire sauce and some other marinade I had.  Also used some prime rib rub.  Did one to 145 and the other to 155.  Both were pretty pink.  Flavor was great with both.  Used Pitmaster pellets from AMAZN.  Took around 4-5 hours at 225.

Used Cabelas jerky mix at 180 in the smoker as well as convection oven.  I like the smoke flavor (hickory) much better in the smoker.  However, I'm switching back to Hi Mountain jerky mix.

Forgot the end pics.  Basically, the oven is convenient and fast, but it gets too dry and crispy.  The smoker takes longer, but the IMHO gives a much better product.  

Like I mentioned, I'm going back to Hi Mountain jerky seasonings.  The Cabelas brand is good, but not spicy enough.
