Yesterday decided to smoke up some baby backs. Looked like rain on and off all day. So finally around 3 I got them started. I think next time I'm going to try going unwrapped. Seems like the last couple of times they got over done. I smoked these for 2 hours between 230-250 and wrapped for 1 hour. And all but one half rack was done when I un foiled. I started my Weber kettle to get the BBQ sauce to thicken a little. And put the undone rack back on the WSM. They turned out pretty good! I'm real happy that I was able to catch them before they got over done.
