Ribs and chicken

Knocked out baby back ribs and chicken today.  Did a full rack for the first time.  Put a rub on about 4 hours prior to smoking.  Combo of store bought and home made.  Went with chicken quarters this time.  Did four total.  Put a rub on about an hour before smoking.  Did 2 quarters with a homemade rub and 2 with a store bought. 

Used the 2-2-1 method for the ribs.  Had to finish in the oven has we had some nasty storms move in and totally screwed with the smoker temp.  Wasn't in the mood to fight the wind and rain so I threw it in a 250 oven to finish.  When I wrapped the ribs in foil, used a splash of apple juice.  For a finishing sauce, used Sweet Baby Rays cut with some apple juice and honey.  Kiddos were eating so I wanted to knock down some of the spice for them.  All and all, I would give it a 7 out of 10.  Need to make some adjustments and I think 3-2-1 will work better next time.

Chicken came out great.  Two for two in that category.  My wife went to cut up a quarter, grabbed it by the leg and the bone came  out clean.  Maybe wrap the legs in foil next time as they seemed to take on more smoke than the thigh.
