3-bone rib roast from Dexter steer, dry brined and simple rosemary/garlic rub.
No special occasion - lovely wife wanted a roast. Had one in freezer so ...

Smoked in Weber kettle with applewood chunks.

Used drip pan with vegetables for making gravy.

Cooked about 2 hours at 225-235, then rest.

Seared over hot coals before slicing.

Served with gravy and horseradish sauce, plus baked potatoes and pinto beans.

Dang that looks great. I need a good horseradish. Momma would love that.
I used to make my own horseradish sauce but been too lazy the last couple years. I've tried some commercial brands and really liked Hickory Farms, but I can't find it any more. Now it's Ingelman's creamy.

That looks so good. makes me think of John actually. He also had some amazing ribeye roasts. That would look good on our carousal.
 
Looks great, I normally do a couple a year, rest of the time I slice and grill, kettle smoking them is my favorite way, I will eat them any way I can get them 🤣
