Hi all,
I'm new to smoking and have only done 2 cooks so far. The first was a massive failure because I couldn't get the temperature up. The second was very successful after some mods.
Tomorrow, I'm going to do some ribs but for reasons that I won't go into, when I unpacked my meat, I found that I hadn't been given the rack of ribs that I wanted and have lots of individual ribs instead.
My recipie (for a rack of ribs) says to cook them for 3.5 - 4 hours at 225-250. However, the next page on the same book explains the 3-2-1 method for ribs, where you cook them for a total of 6 hours at the same temp. I was going to do the 3-2-1 method just because it seems a bit more idiot-proof but I'm totally confused about cooking time now. Throw in the fact that I have individual ribs rather than a rack and I don't have a clue.
It's too late to get a rack of ribs now so I'm going to have to make the best of it. Any advice please?
