Agreed, that's what we did with our food truck. you do not have time to smoke on site.In a food truck, your better off just cooking the food, then load the truck up and go sell it. Even if your planning on setting up in only one location, having a seperate trailer for the smoker is way better that attaching the smoker to the concession trailer. It can always be designed to but up against it so as to look like one unit
