Just watch your IT at the time they come off. Shoot for 5 degrees less than your target IT then wrap and rest. A couple hours is very workable done this way.I just want to be sure I don't leave it wrapped and resting too long. I usually let Brisket rest wrapped 2 hours or more. Will resting Tritip that long have the same effect?

If you foresee a long rest, pull it early. Just watch the internal temp. This is in the low 130s°I just want to be sure I don't leave it wrapped and resting too long.
