Remember your first attempt at smoking?

I am going to second this statement and all I will say about my first SEVERAL Smokes is that there was a whole lot of trial and error.......mostly error

I started as a teenager with a Little Chief smoking jerky and fish. I couldn't really go wrong with that setup. When I upgraded to charcaol and wood it was then the problems and learning began. My first smoke in that environment was a roast at it turned out a bitter tough smoke. Horrible in comparison to what I turn out these days.
 
The first 2 times I tried smoking ribs I burnt them so badly that they were crispy and tasted like i was eating hardwood charcoal with a little bit of sauce on 'em. Then for some reason I tried smoking a beef roast, which actually turned out tasty but dry as could be! Luckily I had a successful pulled pork attempt after that which got me hooked on smoking. I was getting pretty discouraged there for awhile...
