I have been given a frozen pork loin. I will be dry curing it. Do to the size of it once cured it will be cut into smaller peaces and frozen. Will this be a problem since it has already been frozen?
 
Cure does not penetrate meat below 36 deg. F... Cut off what you want to cure and repackage and freeze the remaining portion without curing it...
 
No problem. Smoked or not
Dry cured, smoked pork loin is Canadian bacon.
We usually cure & smoke it, then slice it up & freeze 1/2 lb packs in vac bags.
I have some that is 2 years old & tastes just like I just smoked it.
In other words it freezes real well.
