Thought I saw a recipe for a snack stick using cure #1, that was dried, not cooked.

Was i imagining things
 
It can be done with #1 in a dry cure chamber, I am assuming thats what you mean. Snack stick dry pretty quick.

that's exactly what i mean. thought i saw the recipe on here or at Len Poli, but can't find it.
 
You can make a snack stick with cure #1 that is dried and not cooked. Cure #1 will give you about 30 days of protection to allow the water activity to drop low enough for a safe product...and snack sticks will dry in 10-14 days. Fermentation is recommended for snack sticks that will not be subjected to heat to the acid drop will protect the sticks along with the salt and cure until the sticks are dry... and I recommend drying to 45% weight loss for these.
