Well I can mark off smoking in a tropical system off of my bucket list. With the weather working against me all things went well.

Pushed through and started cooking these pork shoulders this morning

Cooked these 8lb butts at 275 with pecan splits for 8 hrs then rested in a cooler for 2 hours. No better way to spend a rainy day than running the smoker.

Yeah I bought a canopy to take on camping trips. It did the trick keeping a majority of the rain out. Whereabouts are you located?
 
Looks real good. Nice work battling the elements. Been there my self more times than I care to remember, lol.
