Rack of Pork with Q-View

Wandering around COSTCO I found a seasoned Rack of Pork, already frenched, for $4.99 a pound. I've never smoked one before so I bought one just over 5.3 pounds for ~$26.  The rub appeared to be a mix of salt, pepper, garlic, onion, chili pepper, diced red pepper and citric acid.  I was busy shopping with my wife wife and I got started late and didn't let the meat warm up enough so put it on at 3:45 with the smoker at 215 and rising. Air temp was 47 degrees. It didn't seem to have much fat on it so put a half pound of bacon over the pork and planned on replacing the bacon at the one hour point. Here's a picture of the pork just as I put it in the smoker.

I got the temp up to about 240 and held it there. About an hour and a half later, I opened, replaced the bacon and sprayed it with a mix of 2/3s apple juice and 1/3 Red Stag cherry flavored bourbon. I glazed it with the same mix every 30 minutes.


When it hit 145, I pulled it, rested it and then put it under a broiler for a few minutes to crisp the top.


I carved it and poured some of the juices back over it before I served it. It picked up a pretty good smoke ring, was very moist and really tasted great.


If you are lazy like me and a local Costco has these pre-seasoned and frenched Racks of Pork, I can only suggest you try one. It was awesome the day I smoked it and the left overs were just as good a couple days later! I served it with no BBQ sauce on Saturday and with sauce on the side a few days later. This has to be one of the best cuts of pork I have ever had.   
 
That looks really great and glad you enjoyed it, but the Price...Wow! Bone-in Pork loins in my area have been $1.69 a pound for that last few months. I am not sure a bit of Rub and Frenching the Bones is worth an additional $3.30 a pound...JJ
 
Where do you live Chef? After we saw these, my wife and I looked all around our area in a number of stores and couldn't find bone in loins plain or fancied up. I know Costco used to have some frozen but, we couldn't even find them.  However, we didn't try a butcher shop, there is one in my area. Is that where you'd find them?

What can I say?

I don't like seasoned meat.  I would rather do that myself.

As to price?  Costco usually has good meat.  I would not pay $4.99. Yet?  Tighten your seatbelts folks. They have plans for us!

Even Frenched?  If mine, I probably wouldn't French them anyway.

But, $1.69 a pound?  In my area we would jump all over those and fill our freezer?

This is from a family owned small market chain that focuses on Meat in the central PA area. They get primarily boxed primals and subprimals and then break them down to market cuts. The $1.69 whole, bone-in loins are common as well as Whole Beef Short Loins, 25lb avg. for $4.99/lb and Whole Boneless Strip Loins, 10-15lb avg. for $5.99/lb. Nice thing is they will Cut to order and Special order as well. I get all my Pork Bellies from them, special order, and they have Hanks of Pig Casings for $16.00 all the time. You can even go in and pick out your Pork Butts and they will grind them while you shop. I don't have a decent Grinder yet so this is a convenience for me.

Definitely check your local Butcher as they will frequently get what ever you want...JJ

I've never done that. Thanks for the info. I looked at the local stores and couldn't find rack or pork or bone-in loin, I didn't think about a butcher. I will next time.
