You guys ever go grocery shopping and still not know what to make for dinner?
Well nothing sounded great except for the tri-tip I had just picked up for the weekend. So the moment I got home (already 7pm ish) I headed to the porch and fired up the MES with plans to cook this beef as hot and fast as possible. So fast I decided to skip the amnps and just throw in some applewood chips. Since I was smoking at max temp I knew I wouldn't have chip burning issues for once. I then seasoned the tri tip with SPOG and olive oil. It was in the smoker until it reached 133F and then I threw it on the grill part of our Viking stove. I have to say, the indoor grill is awesome, but don't skimp on a good hood vent. I tried to let the meat rest for quite a bit but the spicy stir fried broccoli and steamed rice were both ready so I jumped the gun and sliced a little too soon. Everything was still delicious though.
