Hey guys. Quick holding question. I did an overnight pork butt smoke for my friends daughter's small grad party. Doesn't start til 4pm. It's 10 am now. I've heard people say they have held them in a cooler for up to 4 hours resting. They cooked a little faster than I hoped. They are approaching temp probably in the next 20 minutes. I'm about 6 hours away from serving time for the open house. Should I just put them in the oven at 150 to hold temp til then when they come off? Was only about a 12 hour smoke.

In my opinion 6 hrs is pushing it.
I would probably wrap tightly in foil and oven hold the for a couple of hrs and then put in a towel lined cooler if oven space is needed.

Pellet smoker? Does it go down to 150?

Hi there and welcome!

I agree with the others.
Wrapping each pork butt in double foil, and then stacking all the foiled wrapped pork butts together on bath towels and wrapping should basically ensure they are fine. 4 piping hot pork butts together and then insualted should hold temp quite well.
For the cherry on top, put that all in a cooler and you pretty much ensure they will be super hot 6 hours later when it's time to shred and serve.

If it was 1-2 pork butts you might be pushing it at 6 hours without a cooler but 4 of them with foil, towels, and a cooler should be fine. Best of luck on it! :D
