-I have read throughout this forum about the plastic gears on this machine and the problems some have had. That being said, if I watch my meat viscosity and crank pressure will I be successful in filling 21mm snack sticks?

Is there a value priced stuffer out there with metal gears?

I use 19mm all the time with my Kitchener. Like you said viscosity and regulating the cranking pressure is the key. Put a piece of tape on the tops of the thread at the point where it almost bottoms out. That will help you at first to know where you are.

I have a LEM with the metal gears and I mark it as well when we use it.
 
Also food grade grease on the rubber o ring and or spray inside canister helps with a smooth stuffing, and takes some pressure off of the stuffer itself
