I'm thinking about smoking a few briskets for alittle lunch treat where i work at, this place i work for helps people with Downs and disabilities in assisted living and employment in a small laundry cleaning service.

ill talk to management Monday but i dint see any problems with serving smoked meats, maby some one here knows alittle more but Ive seen downs people eating smoked Turkey legs at the state fair last year.
 
I think it would be a good thing for you to do, I' sure they would enjoy it alot, never know they may not have ever had smoked meat.
 
well i dont think they would know the difference from my finest 22hr brisket to the 12hr one's but they do love anything thats givin to them.

Management is all or this idea and no problems with smoked meats

and Ive got a feeling that they might buy the briskets, now I'm trying figure out how many people a large brisket would feed. i dint remember the weight of the last one i smoked, thinking about getting 3 of the largest briskets i can find and serving 3 slices for each person, dint think ill get into the oz per person.
any suggestion would help
 
i agree on that but im thinking that 3 briskets would feed everone.

I always figure 50% lose of weight after trimming and smoke with brisket, Bun size will play in, small 3" bun gets 4 sammies a #, large 4" and hogies get you 3 sammies per #, do a kwick figure on people/#'s of fresh meat and you will be close. I alway add to the figured amount, useally 1 more butt/brisket just to be safe, left overs ain't a problem.

hell have to decide on how to serve the meat
3 briskets will be $60 +, small buns would probly make the meat last longer but then theres the extra cost, buns,toppings,condaments, or have 2or3 sides and serve 2 or 3 slices of meat and they can eat it as it is.
 
found out that an avg number of people in the building would be around 30.
