I seasoned, cured, & cased some summer sausage and regular sausage to smoke last night. My question is how long can i keep it refridgerated before i put it in the smoker. I usually do it within 24 hours but I may have to wait up to 48 hours before i can cook it. Will this be alright ? Thanks
