I just got a Maverick Wireless ET 732 thermometer for my birthday.  The probe inside the smoker registers about 50 degrees higher than the digital readout set on my Masterbuilt electric smoker.  Which do I believe?  Confusing-----

I would boil test the ET 732 and as long as it read right I would believe t. The thermometers that come with the smoker are often off.

My MES30 has "hot spots" in it. Over the chip pan is the hottest. Against the back wall is the second hottest. It seems that if I put the smoker probe on my ET-732 in the center or front of the cooking grate it more closely matches the MES30 temp readout. Even at that my MES reads 25 degrees hotter than the ET-732. I have used the boil test on the ET-732 and have double checked the ET-732 food probe with a Thermapen. I now set my smoker temps to the ET-732 instead of what the smoker thermometer reads.Food seems to come out better.

I'll be darned. I checked both probes in boiling water and they both read 212. Imagine that. That thing is accurate. Guess I'll have to recalibrate my cooker. Thanks for the advice.

I don't know if the MES can be recalibrated. If you find out how let me know mine is off 20*. I called Masterbuilt and they sent a new probe but I have not changed it out yet...JJ
