I got the 18.5" wsm. It seems to have worked itself out..maybe the outer layer of coals were being lit? Up to 230 now. Love this grill so far.

Lighten up Gary.... A member needs help... and Dallas shouldn't be in the playoffs.... the refs were bought off.....
 
I will add another thing. I use a redi check middle of road thermometer and a thermapin for meat. I have always believed the thermostats on grills are so wrong. Point in case temp on thermometer is 230 grill says 175
 
Hey 2kkinz,  Grill thermometers are notorious for being wrong,  Post some pictures for all to see

I guess Dave is not a Dallas fan

I've been using my wsm I'm from Vancouver. It's been around 30 Fahrenheit here. I have to use little to no water in the water bowl or it won't get past 200 degrees. I find if I add a couple cups if boiling water to it every couple hours it works good. Then I can leave the vents 3/4 open
 
First check your temp gauge They are notorious for being off. Water boils at 212 º so you are not adding much heat. lots of people don't use a water pan.  Maybe a WSM guy will jump in and shed some light, I am an old stick burner.
