Here is a nice pork butt I cooked last night.  It's rubbed with mustard and a KC rub I think I got from this site.  This was a little smaller pork butt than normal.  It took about 9.5 hours to hit 200 @ 250F. (normally I'm 12-14 hours).  It started at 4pm yesterday and finished it up at 1:30 am.  I put it in a cooler wrapped in a towel and let it rest until I woke up for work at 5:00 am.  The IT was at 163.  It pulled real nice and easy.  

Here is the KC rub I used:

1/2 cup brown sugar

1/4 cup paprika

1 tablespoon black pepper

1 tablespoon salt

1 tablespoon chili powder

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne

I forgot to take a before picture, but here is it is all finished up.

Just a simple pulled pork sandwich.  Dang, was it good!  I love pulled pork.

I fork pull it at first to break apart the bigger chunks and to get it to cool down. Then I hand pull it.
