Got a couple small bone in pork butts for a little family get together tomorrow. By far my favorite thing to smoke!

Going to try a new rub and see how it turns out. First time cooking for the fiance's family, so I thought I'd better go with something I know will turn out.

Im a new smoker and doing my first one tomorrow !! Im using a pellet smoker any advice ? Fat up or down ?
I usually run fat side up. I've heard arguments both ways. I stick about a cup of apple juice in the drip pan and let it go. I've found not wrapping gives it a better bark and I'm all for that! Good luck! Let us know how it goes!
