How long could I hold PP 145 +before quality diminishes?

Whar do you call several hours. Thinking I'll start late morning shooting for midnight finish. Sleep, take to work warm to be eat on during the day thru lunch. Other option is finish early evening, fridge and reheat at work adding auju back.
I would recommend a reheat in a Crock-Pot with au jus.
Several hours would be holding for 3-4 hours while people eat on it.
