I am planning a get together for next Saturday. My problem is that I have a bass tournament that day. Next Saturday is the only night that I have available. Mt question if I smoke the butts this weekend how do I keep them. It is possible that I wont work the Friday before and if not is it best to pull it and refridge it overnight. What is the best way to reheat it.
Thanks Bryon

First thing you have in your favor is planning ahead of time

My suggestion would be to smoke the meat and pull it then place into quart size (or gallon) freezer bags and freeze until the party. Reheating is a snap - drop the freezer bags into boiling water then add your finishing sauce and/or bbq sauce and hog out!!

Besure ta save that there golden juice that accumalates durin the rest, pour inta a mason jar an inta the fridge, then skim the fat offen the top, after reheatin the pork like sumo says, pour in a bit a the golden juice ta keep it moist! Ifin yall ain't got enough then a good substitute is apple cider or even apple juice.

Good luck an enjoy yerself!

Bryon, you darn well know you will be pre-fishin the friday before!

Smoke it up the week before, and freeze. Add the juices before ya freeze it.

I agree with Dan

When reheated ( oven, crockpot, smoker, whatever ) It will be as good as fresh. I would probably put it in a pan, foil it and heat it in the oven at 225 till hot.

Thanks for the input. Bassman, That just might be the ticket!! Capt Dan, That sounds like a great idea, now all I have to do is convince the wife!
