Pulled Pork Chili

I smoked a butt on Saturday but wanted to try something new, so i made pulled pork Chili.

I looked up some recipes online but ended up making my own combining them

I cooked down one large onion and 4 garlic cloves in some olive oil, and just softened them up (but didn't brown).   I added those to the following

two cans of rotel tomatos

one can of tomato paste

two cans of chilli beans (mild) with juice

two cans of black beans  with juice

one can of corn (drained)

one small jug of chicken stock

2-3 lbs of chopped pulled pork (eyeballed it, but cut it down into smaller pieces)

2 tbs Cumin

3 tbs chilli powder

2 tbs red pepper flakes

2 tbs honey

2 tbs of creole seasoning

2 tbs of brown sugar

1 tsp cinnamon

2 tbs of kosher salt

1 tsp garlic salt

cilantro

then put it in the crock pot for 4 hours, stiring every 30 minutes.  

its great, i have small kids and it wasn't too spicy for them, but you could add more spice for you taste buds.   I brought the crock pot to work today and the guys are really enjoying it also. its even better today!

the great thing about pulled pork is all the things you can do with it. 

Saturday we ate pulled pork sandwiches, Sunday had pulled pork chili, last night ate pulled pork soft tacos!
