Pulled pork chili recipes?

I have two recipes for green, one is Colorado style the other is not. When I use pulled pork in them, I get everything else made and nearly done cooked etc. Add the PP at the end for a short warm up. When I cook the PP in the green for an hour or more it just disintegrates.

Colorado Gree, slow cooker

this is my non-Colorado version.
Green Chili

2.5 - 3 lb. boneless country pork ribs
3-4 cloves garlic sliced thin
1 onion diced
1 - 1.5 lb. frozen Hatch Mild Chilies (505 frozen green chilies are also good)
16 oz. chicken stock
16 oz. beer – Coors Banquet, or a lager – something lite
28 oz. canned tomatillos, drained and crushed
1 TBSP oregano
1/4 tsp black pepper
1 tsp cumin
1/4 tsp rep pepper flake OR Chipotle pepper
1.5 TBSP Ancho chili powder
1-14 oz. can dice tomatoes
Salt to taste
  • Grill pork till done, cool and dice, save and juice and set aside.
  • Brown onion
  • Add garlic for 1 minute
  • Add pork and combine briefly.
  • Add remaining ingredients
  • Simmer 1-2 hours to desired thickness.

The Colorado one fills my slow cooker (its not a huge one). That is the creamy style.

Lately ive been lazy and buying the "pork for chili" makes it real fast. The non-Colorado one I picked up a couple decades ago and modified.

Hatch chilis are hard for me to find. Kroger usually has the frozen 505's that are like 1.5 lb or so. Mild has some warmth. Bueno are super mild and the container is less than a LB. 505 is my goto.

So that's pork ribs verses pork butt. Will it hold together better than the ribs? I guess I can do your mix and wait an hour before pulling the pork and adding it to the rest. I'll give it a whirl!!

I tend to use leftover pulled pork in tacos, burritos, enchiladas and the like.

Mr's ~t~'s green chili uses coarse ground pork butt and often we'll add some small cubes of pork butt as well. The recipe is below, and the roasting of the meat with the seasonings on top really adds to the flavor.
