Did up a small Butt and pulled it. Saved all the juice and let it congeal in the fridge. Scraped the fat off the chilled juice, threw the juice back in a pot with the Pork, chopped up some Jopalenos, red peppers, added some spices and we were on our way to some great home made Burritos.
Started out with nice big flour Tortilla shells, slathered them in refried beans, diced green onions, shredded cheese, sour cream and guacamole, then layered on the nice juicy meat. Rolled those babies up and covered them in more sour cream, cheese and onions. We had to eat them with forks instead of being hand held.
As you can imagine, they weren't really very good,
but with the help of a pitcher of Margaritas, I managed to whoof down three, of dinner plate size.
They were so good, my wife wasn't far behind me. In Burritos or Margaritas. Ya just gotta love Saturday nights!!
Only thing that came out wrong is that I forgot to take any pictures. I'll try to do better next time.
