Seasoning my mes right now. Going to fire up a meatloaf once it is done. I have a digital probe thermometer that when I use in the oven I just run out of the door. Should I do the same with it in the mes? Doesn't seem to be a good idea to run it out one of the vent holes so it seems like I should run it out the door. Any thoughts?

By the way thanks to everyone on the advice on the meatloaf as a good first thing to smoke in the mes! Probably do cheese and jerky over the next couple of days.

Mvincent, hello.... welcome to the bunch...

It is my personal choice to (in my case ) make a hole for my probe wires . The wires are vunerable to bending, kinking and easily damaged by pinching them in a door...therefore IMHO , I would go through the vent .

Thanks for the advice. I will probably eventually drill a hole once I've used it a few times and know the right spot to drill it. I will go through the vent today.

I would go through vent for the same reasons mentioned.

Be careful drilling holes into the MES. They run the wires kind of strange for some models. Might drill through a wire on accident.

Good info. I will pull up a wiring diagram before I start. Good thing you said something I am the kind of guy that will just start drilling holes if it seems like a good idea. Thanks.

Howdy, VIncent !

I have the MES40 and have run the wires of my probes through the vent AND just let them come out the door. I have found no noticeable problems with the cables, but I am very careful not to kink them.

JME and YMMV.

One thing I have noticed with the MES we have at work is the thermometer for the cook chamber is way off. It runs low. Just keep an eye on it or get a secondary thermometer you can calibrate.

I will check it. Thanks. Was thinking about getting an ambient thermometer anyway so that might speed it up.

Some of the members buy those repair kits made for fixing table lamps. The kits contain various lengths of 1/2" threaded tubing, nuts and washers. Drill a hole through the smoker wall and put the tubing through the wall and secure with washers and nuts.
