I just came back from Ralphs today. They have PrimeRib roasts on sale.
$3.88 for Select
$4.88 for Choice( may need to ask meat man as it was in the display)
I bought a 7 pound choice. The choice for me was also aged more as could be seen by the dry outside, actually meaning it was more meat for the pound( ie less water)
I'm gonna dry age it in my fridge for 6 days for a dinner party next week.
Anyone recommend some good ways to smoke it?
is smoking better or roasting?
