Used the snake method lit 10 bricks for the start

Kettle got up to temp pretty fast Put the meat on

Temp was up and down took 4 hrs to hit 140°F

Looks great,have done a few over the years and that's the look I shoot for,when I slice my wife's has to be thrown back on as she will Not eat any pink :( she would prefer dried out so its a challenge to get done just perfect without drying it out

Chile Thanks it is a nice cut of meat,we buy it when it is on sale.I normally only cook a single bone for the wife an I,this 2 bone is going to be left overs and then soup.Thanks for the Like I appreciate it
