Pretzel wrapped Kielbasa

Made some kielbasa awhile back . When I do it , I'll smoke some , but also leave some un-smoked for grilling , but its all mixed the same , cure and binder .
Digging thru the deep freeze I was happy to find some at the bottom . I also had some bread dough that has been in the fridge 4 days that I needed to use up . So pretzel sandwich sounded good for lunch today . That's about it ,,,

The only other thing this needed was a Warsteiner dunkel , but I'm all out .

Interesting, I have been thinking of making a “corn dog” with some chorizo but this is another
option I might have to try as well. Did you use just plain bread dough then boil and bake? Looks

I mix up a basic dough recipe almost every week . Then I put it in the fridge to ferment until I need it . Makes great pizza dough . Today I used it for pretzels .
10 cups water 2/3 cup baking soda . Stir the baking soda in the water and bring to a boil . It will take longer than just water by itself . DON'T boil the water first an add the baking soda . It will boil over . After it boils just drop the pretzels in . 30 seconds or so each is plenty .

What temp and how long did you bake them for?
I baked these at 375 until I got the color I wanted . The sausage was almost cooked , so I knew it would be cooked thru by the time the bread was cooked .
You can also boil them without the baking soda , comes out like a bagel . There is a pretzel shop on the southside that makes these . He told me he puts the sausage in un cooked . I don't know ,,, I cook mine first .

I did this short notice today , so thanks for the interest . I do it alot , but google Alton Brown soft pretzels . That can give you a basic idea on the dough part of it .

The same here: can someone share a recipe to make a corn dough for corn dogs? I know this kind dough has a lot of calories but...have it once in a while won't kill. Thank you!

Here is a recipe I found on the net, I can’t remember what kind of sausage they used but any kind
should work. I thought I bookmarked it but I can’t find it anywhere, I did write down the ingredients
for the batter though. Anyways, my thoughts are to use fully cooked sausage because the corn dog
won’t be in the deep fryer long enough to cook the sausage.

Make batter, dip sausage to coat, carefully place in 350 deg oil and cook till coating has a nice golden
brown color. You could use a kebab stick or even a popsicle stick if you want to give it a “handle”

Very simple batter recipe:

1/2 cup cornmeal
1/2 cup AP flour
1 Tbl sugar
1 tsp baking powder
1/4 tsp salt
1 egg
1/2 cup buttermilk
1 TBL oil

Well I started just using the same dough for all of it , but the main purpose is for pizza . I do it so much it got kinda loose and I really don't measure , but this is close
1 3/4 cup water
1 pkg yeast
1 Tbls sugar or so
4 1/2 to 5 cups flour
2 Tbls olive oil
Salt . I wanna say a tsp or so .
I mix this up on Sunday so I have it for the week . Then I use it for whatever .

Have you been to Gus's pretzels on the south side ? Across from AB . Fantastic . He does Italian , Bratwurst and hot dog wrapped in pretzels . The ham and cheese sandwich is killer . A full hand twisted pretzel ripped in half and fill with sliced ham and Swiss cheese .

No man, I haven't had to cross that river for work for 20 yrs. I avoid it like the plague.
