My oldest finished preschool and is headed to Kindergarten. We decided to have a family dinner to celebrate and did a pork butt on my UDS. I smoked it last weekend and then vacuum sealed and put it in the freezer. I reheated in warm water over the stove and then kept it warm in our crock pot.

I filled my basket full or charcoal with chunks of pecan around 10:30 AM and put the butt on around 11:00 AM. It finally hit 205 degrees around 2:00 AM. It was an 8 lbs butt and this is the first time I have went straight through without wrapping in foil. I did not get a picture of the final product before I pulled it.

I also did a slab of BB ribs for my mother for Mother's Day.

Very fun thing to celebrate. My son is “graduating” preschool next week as well.

Thank you! We have to keep an eye on the dog if we leave her alone.
