Anybody see any problems with this? One will be burger with cheese mushroom and onion the other sausage bbq sauce and not sure yet. Both will be wrapped in bacon. Id think once they are made I could just wrap them in plastic and be ready to go for tomorrow.
 
Yep you will be fine. If you had veggies like spinach, or other items that could become soggy that wouldn't be perfect, but wouldn't be terrible either. Make sure and show of your smoke with some Q-view!
 
I just did one, with the timeline:

1) Took out a pound of sausage, and a pound of ground beef from freezer, let sit in the fridge for a day to thaw.

2) Mixed the two together, added my spices, smashed down into a flat sheet, and put into a 2 gallon ziplock for a day to set.

3) Added my pizza stuff (marinara, cheeze, pepperoni) on the flat, rolled it, rolled my bacon weave around it, then back in another 2 gal. ziplock in the fridge for a day to set.

4) Smoked and ate.  All worked out great in my case.
