So how were they? What did you marinate them in?  Alder wood to smoke?

Fish heads, fish heads, rollie pollie fish heads, eat them up yumm!!!

When I was working in the fishing industry and the salmon fishing was good, there was a Japanese fellow in town that would wait at the fillet table with a 5 gallon bucket and would take all the bones and heads he could get! I asked him one day about it and the next day he brought me the most wonderful salmon soup and noodle dish I've ever had!!!
 
Down here our Asian community have a thing for the heads of our deep water cod species,bar cod,blue eye cod,hapuka.They make fish head curry or Malaysian sambals.Big snapper work well too apparently. Our salmon is all farmed ,not native fish down here so not as popular.
 
I save the bones and head of salmon . to make salmon soup with rice. Its wonderful. Also save the bones to smoked, since it has meat on it still. After it smoked I get the meat off the bones and make a smoked salmon dip.
