The star of this was that Diakon Salad. I took Steve's potato dish and made low carb with Diakons. Man was it good. The tendorloin had just been in the freezer to long. I had just recently went through my freezers and trying to use up the oldest stuff. I had a 2 lb piece of pork butt that I tried to make sausage with and that ended up in the trash. That where the rest of this pork going. For the Diakon I halved the recipe and doubled the cheese as 2 oz of cheese not enough to run through my grater. Here is the recipe for the potatoes:
