Pork Tenderloin with Chimichurri

I smoked up two tenderloins with a BPS Desert Gold. First time using this rub - LOVE it on pork, would be killer on poultry too Made a chimichurri and the side was a quinoa, edemae, jalapeno sesame oil salad.

Smoked the tenderloins at 235 to an IT of 140. they were juicy and delish! These cooked fast - just shy of two hours.

this is the chimichurri recipe - it was nice but not too bold for the pork. add all and food process.
  • 1 cup coarsely chopped parsley
  • 1/4 cup chopped onion
  • 6 cloves garlic, coarsely chopped
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
turned out pretty dang good.

OH YES!! That is one ultra fine looking meal right there Dave. Beautiful plate and a fantastic job sir. I certainly wouldn't walk away from a plate of that :emoji_wink:

for a follow up - picked up some jalapeno cheddar bagel buns and made samis with some leftovers. and a roasted corn salad

Tenderloins are a favorite in our house and you did those babies proud. Nice Job

Oh yeah!! That is one fine plate! And that sandwich with the leftovers looks amaizing! That jalapeno bagel bun had to be awesome! BIG LIKE!

Beautiful plate. That Chimichurri recipe looks awesome. Hell, the leftovers are a home run as well. Very nice.
